Egg Roll in a Bowl
Ingredients:
1lb chicken (you can use turkey, I just like chicken better)
1 sweet onion thinly sliced
1 TBSN olive oil
1 TBSP rice vinegar
2 tspn minced garlic
1 tspn fresh ginger (substitute ground if you don’t have fresh)
1/4 cup low sodium soy sauce or coconut aminos
16 ounces of finely chopped cabbage, mix purple and green
1/2 cup matchstick carrots
8 ounces of sliced mushrooms (whatever you like)
2 green onions, thinly sliced
salt and pepper to taste
For Sauce:
1 TBSP sesame oil
2 TBSP soy sauce or coconut aminos
1 TBSP hoisin sauce
Mix in a bowl and set aside
Instructions:
Heat large skillet over medium-high heat with olive oil and add ground meat and cook, stirring, until no longer pink, drain and return to skillet
Add diced onion, rice vinegar to skillet. Cook, stirring, for few more minutes, until onion is tender.
Add garlic, ginger, soy sauce, mushrooms, cabbage, and carrots to skillet. Salt and pepper to taste. Cook, stirring for about 5-7 minutes, until cabbage wilted.
Pour mixed sauce over the top and stir in well.
Remove skillet from heat. Stir in green onions and ENJOY!!
